+Peel and rinse Yukon Gold potatoes (or any soft potato)

+Cut potatoes into even strops, at least 10mm thick

+ Soak potatoes in cold water for 1 hour

+Deep fry in a large skillet, using ox fat (or frying oil) at 325 degrees for 5-7 minutes

+Remove carefully and drain on paper towels until cool

+Return to frying pan (or fryer) for a second time until Belgian fries are crisp and golden brown

+Remove from skillet and drain once more

+Use tongs to place Belgian fries in wax paper inside of a metal serving cone

+Sprinkle with a bit of salt and enjoy!

*TIP: Serve with garlic cream mussels and an imported Belgian beer for an authentic Belgian meal that will impress your dinner guests.
