Thanksgiving is a time for family, gratitude, and great food. While the Thanksgiving staples are always delicious, it’s time to spice things up with a new recipe, and hopefully a new tradition- pumpkin empanadas! Empanadas are a Spanish style hand pie pastry or turnover that can have sweet or savory fillings. Thanksgiving is the perfect time for these when filled with pumpkin for a different take on pumpkin pie.


  • 3 cups all-purpose flour
  • 1/3 cup white sugar
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon baking powder
  • 1 cup vegetable shortening
  • 1 cup warm water
  • 4 cups canned pure pumpkin
  • 2 eggs
  • 1 cup white sugar
  • 1 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon cloves
  • 1 beaten egg
